Cypriot cuisine is the cuisine of the Cypriot people who live on the island of Cyprus located in the north-eastern Mediterranean Sea. Cypriot Cuisine shares many features with the Greek and Turkish cuicine however it has a distinct character of its own. Frequently used ingredients are courgettes, green pepper, grape leaves, beans, broad bean, pea, black eyed beans,lentils, chick-peas,green beans okra, artichoke, cucumber, lettuce, carrots, tomato, green beans, celery, roka ( a special kind of vegetable) cabbage, cauliflower, kolokasi ( a unique cypriot product a bit like horse-radish). Pears, apples, grapes, oranges, mandarin, avocado, nektarini ( it is a blend form of appricot and peach), medlar, black berries, citrus, lemon, cherry, strawberries, fig, watermelon, melon, pistachio, almond, chestnut, walnut, hazelnut are some of the commonest of the fruits and nuts. Some of the most well-known spices and herbs are: parsley, pepper, mint, thyme, oregano and others.
